On June 24, in Hanoi, the Vietnam Fish Sauce Association in collaboration with the Vietnam Culinary Culture Association, the Department of Processing and Market Development of Agricultural Products (Ministry of Agriculture and Rural Development) organized the Association Workshop "Promoting fish sauce exports: Orientation and solutions".

Data from the Department of Agricultural Product Processing and Market Development at the conference showed that the whole country has more than 4,200 fish sauce production facilities with an average output of nearly 380 million liters in 2020.

In recent years, Vietnam's fish sauce industry has promoted the application of science and technology, ensuring safety and hygiene in production, meeting the taste and strict standards of the international market. However, Vietnam's fish sauce is facing strong competition in the export market with a modest market share compared to its potential.

A workshop to discuss solutions to boost fish sauce exports took place in Hanoi on the morning of June 24

Dr. Le Thanh Hoa, Deputy Director of the Department of Agricultural Product Processing and Market Development and Director of the SPS Vietnam Animal and Plant Quarantine Office, said that the average export of fish sauce in the whole country only reached about 12.6% compared to that of Vietnam. with total production. In which, the Asian market accounts for more than 54%, Australia more than 18%, Europe more than 13% and America more than 13%. Total export turnover of fish sauce in 2021 will reach 28.53 million USD.

According to Dr. Hoa, in order to sustainably develop the fish sauce industry for export, it is necessary to ensure the source of raw materials in both quantity and quality. ensure the quality of input materials for fish sauce processing. At the same time, research tastes, expand export markets with a variety of fish sauce types; prepare full traceability documents, meet the regulations on food safety of the markets; step by step building a national brand for Vietnam Fish Sauce.

According to Prof. Dr. Luu Duan, Head of the Advisory Board of the Vietnam Culinary Culture Association, promoting the export of fish sauce needs the cooperation of state agencies, production and business enterprises, and the Vietnam Fish Sauce Association. Nam as well as individuals and scientists in connecting and finding highly practical solutions.

Businesses and households producing and trading fish sauce need to invest more money to change technology and apply quality management systems such as HARPC, HACCP, ISO 22000, ... to meet the requirements. on food safety and hygiene, eligible for export to the US, Australia and European markets. Besides, it is necessary to invest and research a variety of models and packaging for luxurious, convenient and attractive products.

Dr. Tran Dang, Chairman of the Vietnam Fish Sauce Association, expressed his wish to develop the fish sauce industry like the wine industry of some countries around the world. There, there is a smooth combination between science and tradition to produce delicious fish sauce products of uniform quality and suitable to the taste of consumers in many markets.

Accordingly, the Vietnam Fish Sauce Association will coordinate with the Vietnam Culinary Culture Association in the "Project on building and developing pure Vietnamese dishes into a national brand" to help fish sauce, processed products From fish sauce, fish sauce brands have a worthy position.

The two research associations plan to organize fish sauce festivals to introduce the "flow" of unique Vietnamese culinary culture to international tourists to Vietnam. All of the above activities need to be widely promoted through the publication of scientific works on Vietnamese fish sauce or participation in major Food Conferences and Fairs in the world.
